Thai Sticky Rice With Mango

We tried this at the farmer's market and looked up the recipe when we came home. It tastes just the same! Yay!

  • 1 1/2 cups uncooked jasmine rice
  • 2 cups water
  • 1 1/2 cups coconut milk (one can)
  • 1 cup white sugar
  • 1/2 teaspoon salt
2 ripe mangoes

Cook rice according to directions on package. While rice is cooking, add coconut milk, sugar, and salt to a small sauce pan. Bring to a boil then remove from heat. When rice is cooked, add coconut milk mixture to it and let cool to room temperature. Slice mango and serve with rice.

Easy Pumpkin Muffins

You really need to try this recipe. I have never really been a fan of pumpkin flavored anything except pie, but these are sooo easy and delicious! I have made them twice. Once the way the recipe is written, and once with a squash from Marla's mom (Thanks Beth!) They both turned out great. One more thing. I couldn't find a spice cake mix so I bought a white cake and added cinnamon and nutmeg.

2- boxes of spice cake mix (or 2 vanilla cake mixes with cinnamon and nutmeg added)
1- 30 oz can of pumpkin
1 package of semi-sweet mini chocolate chips

Mix the pumpkin and cake mixes. Add chocolate chips. It will be really thick! Spoon into muffin cups (it makes about 30-35 muffins). Bake at 350 for 20-24 minutes. This recipe came from a blog called Our Best Bites.

Fudge Sundae Pie

Crust: ¼ c. corn syrup
2 T. firmly packed brown sugar
3 T. butter
2 ½ c. Rice Krispies

Cook corn syrup, brown sugar and butter over low heat, stirring occasionally, until mixture begins to boil. Remove from heat. Add cereal, stirring until well coated. Press into 8”-9” buttered pie pan to form crust. Freeze until crust is firm.

Filling: ½ c. peanut butter
½ c. hot fudge topping (NOT chocolate syrup)
6 T. corn syrup
1 qt. vanilla ice cream

Stir together peanut butter, fudge topping and corn syrup. Spread 2/3 of mixture over crust. Freeze until firm. Allow ice cream to soften slightly. Spoon into frozen pie crust. Freeze until firm.

Let stand at room temperature about 10 minutes before cutting. Warm remaining 1/3 of mixture and drizzle over the top as desired.

FAST EASY BREAD!!!!

Okay...so I am not posting a recipe but I discovered something that is so exciting that I wanted to share it with you! This is a MUST!!!! A friend introduced "Fast Easy Bread" to me and it is the best! Yesterday, I made cinnamon rolls and 2 loaves of bread in 1 1/2 hours. That's from making the dough, to rising, to baking! And the bread is yummy!!! So what you have is this fast rising yeast and some liquid soy lecithin (looks like molasses) which is a substitute for butter and egg. It was crazy awesome how fast I was able to make bread last night! The best part is that it was only $20 and it is estimated to make about 48 batches!!! Here's the website! Take a look!

Latin Rice with Chicken

1 tbsp olive oil
2 tbsp butter
1 lb chicken, cut into small pieces
salt and pepper
2 cups rice
3 cups chicken stock
1/2 tsp poultry seasoning
1 tbsp Goya Sazon (a Mexican seasoning found in the Hispanic aisle)
1 cup tomato sauce

Heat olive oil and butter in large skillet. Add chicken and season with salt and pepper. Cook until brown. Add rice and cook about 2 minutes, stirring frequently. Add stock, seasoning, and tomato sauce. Bring to a boil and let bubble 2 to 3 minutes, stirring frequently. Reduce heat and simmer about 15 minutes.

Serve with sour cream and smashed avocados.

Chicken Cordon Bleu Casserole

4 slices white bread, torn into quarters
2 tbsp butter, melted
3 lbs potatoes, peeled and sliced 1/8-inch thick
1 tsp salt
4 tbsp butter
1/2 tsp garlic salt
1/4 - 1/2 tsp thyme
6 tbsp flour
2 cups chicken broth
3/4 cup cream
2 cups shredded swiss or mozzarella
2 tbsp dijon mustard
1/4 tsp cayenne
2 chicken breasts, sliced thinly
8 oz deli ham, chopped

Preheat oven to 400 degrees.

Put bread and butter in a food processor and pulse until coarse crumbs form. Set aside.

Bring potatoes and salt to a boil in about 6 cups of water. Simmer about 2 minutes - do not cook all the way! Drain and set aside.

Melt butter in large skillet. Add garlic salt and thyme. Add flour and cook about 1 minute. Slowly whisk in broth and cream and bring to a boil. Remove from heat and add cheese, mustard, and cayenne. Add salt and pepper to taste.

Toss potatoes with half of sauce and spread them in casserole dish. Layer chicken and ham on top, making sure not to overlap two pieces of chicken so the chicken will cook thoroughly. Spread remaining sauce on top. Cover with bread crumbs.

Bake 30 to 35 minutes.

Raspberry Risotto Oatmeal

1/2 cup oats
1 cup arborio rice
1/2 cup heavy cream
6 cups water
1 tbsp vanilla
1/2 cup sugar
1/4 tsp salt
1 bag frozen raspberries (or fresh, or strawberries...)

Add all ingredients except fruit in large saucepan. Bring to a boil, cover and simmer 25-30 minutes, stirring occasionally.

Add raspberries to individual portions and stir to combine.

Chicken a la King

4 tbsp butter
1/4 cup flour
1 1/2 cups milk
1/2 cup cream
3/4 cup chicken stock
1 tsp salt
1/2 tsp pepper
1/8 tsp cayenne
3 egg yolks
1/2 tsp lemon juice
shredded chicken
frozen mixed vegetables (I like peas and carrots)

Melt butter in large skillet. Whisk in flour and cook about 1 minute. Add milk, cream, and stock and bring to a boil. Remove from heat and stir in salt, pepper, and cayenne.

Beat egg yolks in a separate bowl and add 1/2 cup of the hot sauce mixture to temper eggs. Stir into sauce. Add lemon juice. Add chicken and vegetables and heat through.

Serve over biscuits or toast. (My favorite is toasted french bread.)

Sausage Bread

Dough

2 packages yeast
1/2 cup warm water
2 cups lukewarm milk
1/2 cup sugar
2 tsp salt
2 eggs
1/2 shortening, softened
7 - 7 1/2 cups flour

Soften yeast in water. Mix together milk, sugar, and salt. Add yeast mixture to milk mixture. Stir in eggs, shortening and flour. Add flour in 2 additions using the smallest amount necessary to make it easy to handle. Knead until smooth. Put in a warm place, cover, and let rise until doubled (1 - 2 hours). Punch down.


Sausage Bread

1 lb raw sausage
2 lbs grated cheese
green chili (optional)

Divide dough into 2 or 3 portions and roll out until it is 1/2 inch thick. Spread crumbled sausage, cheese, and chili on dough. Roll up jelly roll style and bake on cookie sheet at 300 degrees for 50 minutes.

Makes 2 to 3 loaves.

Marla's Yummy Salsa

1 can of Rotel (regular)
1 med onion
1 hot jalapeno
1 handful of cilantro
2 cloves of garlic
juice of 1 lemon or lime (I like lemon, Dustin likes lime)
salt and pepper

In a food processor add half of the Rotel including the juice, added roughly chopped up onion, jalapeno, cilantro and garlic. Blend together, add the rest of Rotel and blend again. Put salsa in bowl and add lemon, salt and pepper. Eat with chips. Beware dragon breath the following morning. Enjoy!

Jalapeno Poppers

6 jalapeno peppers
1 pkg of cream cheese
1 pkg of bacon

Preheat oven to 400. Take washed jalapenos slice them lengthwise in half, take out seeds and ribs. Be careful not to touch eyes. :) Take a spoon and scoop some cream cheese into the jalapeno until full, then wrap with 1 slice of bacon put on rimmed baking sheet lined with foil. Bake until the bacon crips up and jalapeno are soft.

Makes 12 poppers.

Super Easy Banana Cream Pie

1 graham cracker crust (large)
1 12 oz cool whip (divided)
1 8 oz. sour cream
1 3.4 vanilla instant pudding
3 med. bananas sliced
2 tBS. crushed pecans

mix half of the cool whip, sour cream, pudding together and pour over graham cracker crust. Top with sliced bananas and other half of whip cream and sprinkle with crushed pecans.

Buttermilk Baked Chicken

vegtable oil, for baking sheet
8 slices of white bread
1 cup buttermilk
1 teaspoon of hot-pepper sauce
salt and pepper
3/4 grated parmesan cheese
1 teaspoon of dried thyme
4 pounds of chicken parts (legs, thighs, wings) rinsed and patted dry

1. preheat oven 400. Rub oil with baking sheet a good coating. In food processor turn slices of bread into crumbs.

2. In large bowl stir, butter milk, hot sauce 3/4 tsp of salt and 1/2 tsp of pepper. In another bowl mix the breadcrumbs, cheese, thyme and 1/8 tsp pepper.

3. Drudge chicken in milk, let milk drip off, put in breadcrumb mixture, coat evenly then place on baking sheet. Don't let pieces of chicken touch, you want to them to crisp up not get soggy.

4. Bake until chicken is golden brown, about 35 minutes.

White Pizza

1 cup of mozzarella
1/4 cup parmesan
2 tsp of dried basil
2/3 mayo
1 garlic pressed
3 med tomatoes sliced

Combine all except tomatoes. Spread over rolled out pizza dough top with fresh sliced tomatoes add more mozzerella on top put in oven for 15-20 minutes. Spreads over one large pizza.I wish I could claim this recipe as my own but my friends in NY passed it on to me! Love it!

Pizza Dough

1 pkg of yeast
1 cup of lukewarm water
3 cups of flour
1 tsp. salt
3 tablespoons of vegtable oil
cornmeal to sprinkle at the bottom (if you want too!)

Mix yeast and water together, until activated. add flour, salt and oil. Add yeast and water, mix. Knead until blended. cover let stand for 20 min and roll out.

Makes 2 medium pizza or 1 thick crust large pizza.

Hamburger Buns

Place the following in bread machine:
1/2 cup water
1/2 cup milk
1 egg
3 1/4 cup flour
1 Tbsp butter
3/4 tsp. Salt
2 Tbsp sugar
1 tsp basil or rosemary (I only use 1/2 tsp)
2 tsp yeast

Select dough cycle. When done, remove to lightly floured surface. If necessary, knead dough to make it easy to handle. Divide dough into 9 equal pieces. Form each into smooth ball. Place on greased sheet. Flatten into 4" rounds; cover with saran wrap. Let rise 20-30 minutes.

Lightly beat 1 egg white and 1 Tbsp water. Brush on buns. Sprinkle with sesame seeds. Bake at 375 degrees for 12-15 minutes.

NOTE: You don't have to use a bread matchin. I don't have one, and my buns turned out nicely! They are pretty good too! Kind of handy when you don't have buns around but need them!

Creamy Chicken and Wild Rice Soup

1 box Uncle Ben's Long Grain and Wild Rice
3 cups water
1 - 2 carrots, grated
1/2 cup frozen corn, approx.
3/4 cup frozen broccoli, approx
8 oz cream cheese, cubed
1 can cream of chicken soup (or 1 1/2 cups of homemade)*
1 cup shredded chicken, optional

Put rice, seasoning packet, and water in a pot and bring to a boil. Simmer 10 minutes. Add carrots, corn and broccoli (as much or as little as you like) and simmer 10 more minutes. Add cream cheese, soup, and chicken and stir until creamy.

Serve immediately.



*I don't like the stuff in the can so I always make my own cream of chicken soup:

2 tbsp butter
1 1/2 tbsp flour
3/4 tsp salt
1/2 tsp pepper
3/4 cup chicken stock
3/4 cup milk

Melt butter in saucepan, whisk in flour, salt and pepper. Whisk in stock and milk and stir over med-hi heat until thick and bubbly.

Carnitas

1 pkg country style pork ribs
chicken broth
2 limes
cilantro
1 onion quartered
salt and pepper
corn tortillas
avocado
salsa (I like Herdez salsa verde)

Put ribs in pressure cooker. Cover with broth. Take zest from one of the limes and add to pot. Put in a few pieces of cilantro and half of quartered onion. Chop the rest of onion and squeeze both limes onto it (marinating the onion in lime juice takes the edge off). Cook ribs in pressure cooker for 30-45 minutes. Preheat oven to 450. Meat should be falling apart when cooked right. If it isn't falling apart put it back in to cook. Remove meat and trim off fat. Shred pork and put into a casserole dish. Salt and pepper to taste. Place in oven. Cook for 5 min. Stir meat and cook for 5 more minutes. Serve on warm corn tortillas with avocado, cilantro, onion and salsa. This meat is also great for barbeque sandwiches.

Yummy Toffee Cake

1 chocolate cake mix (with ingredients)
1 can of sweeten condensed milk
1 jar of caramel topping
4 Heath candy bars (or Skor) crushed into pieces
Cool whip

1. Make chocolate cake according to package. Let cool. Using a knife, or fork, poke holes into cake. Try not to poke all the way threw to bottom or you will find all your caramel mix at the bottom of the pan.
2. Mix sweeten condensed milk and 3/4 jar of caramel topping together. Slowly poor over cake, allowing the caramel mixture to soak into the cake.
3. Sprinkle 3 of the crushed Heath bars over the cake.
4. Frost cake with cool whip and then garnish with the last of the crushed candy bar and reserved caramel topping!
YUMMY!!!!!

mexican coleslaw

I am so happy I found this recipe! It's just like the slaw that I have at me favorite Mexican restaurant here in Las Cruces.
1 bag pre cut coleslaw mix (in the bagged salad section)
1/3 cup white or rice vinegar
3 TBSP vegetable oil
4 tsp sugar
1 tsp grated onion (I used a couple shakes of onion powder)
1 tsp celery salt
1/2 tsp ground mustard
1/4 tsp each salt and pepper

I threw all the ingredients for the dressing in a jar with a lid and shook it until it was all mixed up. Toss with the coleslaw mix. Cover and refrigerate for 1 hour.

Asian Turkey Filling

2 tsp vegetable oil
1/2 tsp hoisin sauce (optional)
1/3 lb ground turkey
1 cup cooked quinoa
1/4 tsp salt
1 can water chestnuts, diced
1/2 head of cabbage, shredded
1/4 cup soy sauce
2 tsp sesame oil
3 tbsp lemon juice
1 tsp hot sauce
1/2 tsp dried cilantro
1 package dry ramen noodles, crushed

Heat the vegetable oil and hoisin sauce in skillet on medium, add turkey and salt and cook until brown. Stir in the quinoa and heat for a minute or two (you can always omit the quinoa and use more turkey if you want). Mix in the water chestnuts and cabbage and cook until the cabbage wilts. Whisk together soy sauce, sesame oil, lemon juice and hot sauce and pour over turkey mixture. Continue to cook for a minute or two so flavors can absorb. Add the cilantro and crushed ramen. Turn off heat.

We had this with rice and squash and it was so yummy. It's actually an eggroll filling (minus the ramen noodles), but that seemed like too much work to me, so we made it wrapless eggrolls. And added the ramen by Eric's request. It worked out well...both Eric and I liked it so that's a dinner success in our house.

Black Bean and Tomato Quinoa

This is one of my favorite stand-alone quinoa recipes. I could eat it as a main dish, Eric considers it more of a side. It's really quick to make, though, and I really like it.

Black Bean and Tomato Quinoa

1 cup uncooked quinoa
2 cups chicken stock
1 tsp salt
2 tbsp lime juice
2 tbsp olive oil
1 tbsp vegetable oil
1 tsp sugar
1/4 tsp salt
1/8 tsp pepper
1 can black beans, drained and rinsed
1 tomato, diced

Bring quinoa, stock, and salt to a boil. Cover, reduce heat, and simmer for 15 minutes (or cook in a rice cooker).

Whisk together lime juice, oils, sugar, salt and pepper. Toss with cooked quinoa, beans and tomato.

Bacon-Spinach Salad

I love vinegar! This really hits the spot when I am craving it. Oh, I also love bacon.

4 slices bacon, diced
1/4 c white vinegar
8 ounces spinach
1/3 c chopped green onions (4 medium)
2 tsp sugar
1/4 tsp salt
1/8 tsp pepper

Cook bacon over low heat, stirring occasionally, until crisp. Stir in vinegar. Heat through; remove from heat.
