Thai Sticky Rice With Mango

We tried this at the farmer's market and looked up the recipe when we came home. It tastes just the same! Yay!

  • 1 1/2 cups uncooked jasmine rice
  • 2 cups water
  • 1 1/2 cups coconut milk (one can)
  • 1 cup white sugar
  • 1/2 teaspoon salt
2 ripe mangoes

Cook rice according to directions on package. While rice is cooking, add coconut milk, sugar, and salt to a small sauce pan. Bring to a boil then remove from heat. When rice is cooked, add coconut milk mixture to it and let cool to room temperature. Slice mango and serve with rice.

Easy Pumpkin Muffins

You really need to try this recipe. I have never really been a fan of pumpkin flavored anything except pie, but these are sooo easy and delicious! I have made them twice. Once the way the recipe is written, and once with a squash from Marla's mom (Thanks Beth!) They both turned out great. One more thing. I couldn't find a spice cake mix so I bought a white cake and added cinnamon and nutmeg.

2- boxes of spice cake mix (or 2 vanilla cake mixes with cinnamon and nutmeg added)
1- 30 oz can of pumpkin
1 package of semi-sweet mini chocolate chips

Mix the pumpkin and cake mixes. Add chocolate chips. It will be really thick! Spoon into muffin cups (it makes about 30-35 muffins). Bake at 350 for 20-24 minutes. This recipe came from a blog called Our Best Bites.
