FAST EASY BREAD!!!!

Okay...so I am not posting a recipe but I discovered something that is so exciting that I wanted to share it with you! This is a MUST!!!! A friend introduced "Fast Easy Bread" to me and it is the best! Yesterday, I made cinnamon rolls and 2 loaves of bread in 1 1/2 hours. That's from making the dough, to rising, to baking! And the bread is yummy!!! So what you have is this fast rising yeast and some liquid soy lecithin (looks like molasses) which is a substitute for butter and egg. It was crazy awesome how fast I was able to make bread last night! The best part is that it was only $20 and it is estimated to make about 48 batches!!! Here's the website! Take a look!

Latin Rice with Chicken

1 tbsp olive oil
2 tbsp butter
1 lb chicken, cut into small pieces
salt and pepper
2 cups rice
3 cups chicken stock
1/2 tsp poultry seasoning
1 tbsp Goya Sazon (a Mexican seasoning found in the Hispanic aisle)
1 cup tomato sauce

Heat olive oil and butter in large skillet. Add chicken and season with salt and pepper. Cook until brown. Add rice and cook about 2 minutes, stirring frequently. Add stock, seasoning, and tomato sauce. Bring to a boil and let bubble 2 to 3 minutes, stirring frequently. Reduce heat and simmer about 15 minutes.

Serve with sour cream and smashed avocados.

Chicken Cordon Bleu Casserole

4 slices white bread, torn into quarters
2 tbsp butter, melted
3 lbs potatoes, peeled and sliced 1/8-inch thick
1 tsp salt
4 tbsp butter
1/2 tsp garlic salt
1/4 - 1/2 tsp thyme
6 tbsp flour
2 cups chicken broth
3/4 cup cream
2 cups shredded swiss or mozzarella
2 tbsp dijon mustard
1/4 tsp cayenne
2 chicken breasts, sliced thinly
8 oz deli ham, chopped

Preheat oven to 400 degrees.

Put bread and butter in a food processor and pulse until coarse crumbs form. Set aside.

Bring potatoes and salt to a boil in about 6 cups of water. Simmer about 2 minutes - do not cook all the way! Drain and set aside.

Melt butter in large skillet. Add garlic salt and thyme. Add flour and cook about 1 minute. Slowly whisk in broth and cream and bring to a boil. Remove from heat and add cheese, mustard, and cayenne. Add salt and pepper to taste.

Toss potatoes with half of sauce and spread them in casserole dish. Layer chicken and ham on top, making sure not to overlap two pieces of chicken so the chicken will cook thoroughly. Spread remaining sauce on top. Cover with bread crumbs.

Bake 30 to 35 minutes.

Raspberry Risotto Oatmeal

1/2 cup oats
1 cup arborio rice
1/2 cup heavy cream
6 cups water
1 tbsp vanilla
1/2 cup sugar
1/4 tsp salt
1 bag frozen raspberries (or fresh, or strawberries...)

Add all ingredients except fruit in large saucepan. Bring to a boil, cover and simmer 25-30 minutes, stirring occasionally.

Add raspberries to individual portions and stir to combine.

Chicken a la King

4 tbsp butter
1/4 cup flour
1 1/2 cups milk
1/2 cup cream
3/4 cup chicken stock
1 tsp salt
1/2 tsp pepper
1/8 tsp cayenne
3 egg yolks
1/2 tsp lemon juice
shredded chicken
frozen mixed vegetables (I like peas and carrots)

Melt butter in large skillet. Whisk in flour and cook about 1 minute. Add milk, cream, and stock and bring to a boil. Remove from heat and stir in salt, pepper, and cayenne.

Beat egg yolks in a separate bowl and add 1/2 cup of the hot sauce mixture to temper eggs. Stir into sauce. Add lemon juice. Add chicken and vegetables and heat through.

Serve over biscuits or toast. (My favorite is toasted french bread.)

Sausage Bread

Dough

2 packages yeast
1/2 cup warm water
2 cups lukewarm milk
1/2 cup sugar
2 tsp salt
2 eggs
1/2 shortening, softened
7 - 7 1/2 cups flour

Soften yeast in water. Mix together milk, sugar, and salt. Add yeast mixture to milk mixture. Stir in eggs, shortening and flour. Add flour in 2 additions using the smallest amount necessary to make it easy to handle. Knead until smooth. Put in a warm place, cover, and let rise until doubled (1 - 2 hours). Punch down.


Sausage Bread

1 lb raw sausage
2 lbs grated cheese
green chili (optional)

Divide dough into 2 or 3 portions and roll out until it is 1/2 inch thick. Spread crumbled sausage, cheese, and chili on dough. Roll up jelly roll style and bake on cookie sheet at 300 degrees for 50 minutes.

Makes 2 to 3 loaves.

Marla's Yummy Salsa

1 can of Rotel (regular)
1 med onion
1 hot jalapeno
1 handful of cilantro
2 cloves of garlic
juice of 1 lemon or lime (I like lemon, Dustin likes lime)
salt and pepper

In a food processor add half of the Rotel including the juice, added roughly chopped up onion, jalapeno, cilantro and garlic. Blend together, add the rest of Rotel and blend again. Put salsa in bowl and add lemon, salt and pepper. Eat with chips. Beware dragon breath the following morning. Enjoy!

Jalapeno Poppers

6 jalapeno peppers
1 pkg of cream cheese
1 pkg of bacon

Preheat oven to 400. Take washed jalapenos slice them lengthwise in half, take out seeds and ribs. Be careful not to touch eyes. :) Take a spoon and scoop some cream cheese into the jalapeno until full, then wrap with 1 slice of bacon put on rimmed baking sheet lined with foil. Bake until the bacon crips up and jalapeno are soft.

Makes 12 poppers.

Super Easy Banana Cream Pie

1 graham cracker crust (large)
1 12 oz cool whip (divided)
1 8 oz. sour cream
1 3.4 vanilla instant pudding
3 med. bananas sliced
2 tBS. crushed pecans

mix half of the cool whip, sour cream, pudding together and pour over graham cracker crust. Top with sliced bananas and other half of whip cream and sprinkle with crushed pecans.

Buttermilk Baked Chicken

vegtable oil, for baking sheet
8 slices of white bread
1 cup buttermilk
1 teaspoon of hot-pepper sauce
salt and pepper
3/4 grated parmesan cheese
1 teaspoon of dried thyme
4 pounds of chicken parts (legs, thighs, wings) rinsed and patted dry

1. preheat oven 400. Rub oil with baking sheet a good coating. In food processor turn slices of bread into crumbs.

2. In large bowl stir, butter milk, hot sauce 3/4 tsp of salt and 1/2 tsp of pepper. In another bowl mix the breadcrumbs, cheese, thyme and 1/8 tsp pepper.

3. Drudge chicken in milk, let milk drip off, put in breadcrumb mixture, coat evenly then place on baking sheet. Don't let pieces of chicken touch, you want to them to crisp up not get soggy.

4. Bake until chicken is golden brown, about 35 minutes.

White Pizza

1 cup of mozzarella
1/4 cup parmesan
2 tsp of dried basil
2/3 mayo
1 garlic pressed
3 med tomatoes sliced

Combine all except tomatoes. Spread over rolled out pizza dough top with fresh sliced tomatoes add more mozzerella on top put in oven for 15-20 minutes. Spreads over one large pizza.I wish I could claim this recipe as my own but my friends in NY passed it on to me! Love it!

Pizza Dough

1 pkg of yeast
1 cup of lukewarm water
3 cups of flour
1 tsp. salt
3 tablespoons of vegtable oil
cornmeal to sprinkle at the bottom (if you want too!)

Mix yeast and water together, until activated. add flour, salt and oil. Add yeast and water, mix. Knead until blended. cover let stand for 20 min and roll out.

Makes 2 medium pizza or 1 thick crust large pizza.
