Thai Sticky Rice With Mango

We tried this at the farmer's market and looked up the recipe when we came home. It tastes just the same! Yay!

  • 1 1/2 cups uncooked jasmine rice
  • 2 cups water
  • 1 1/2 cups coconut milk (one can)
  • 1 cup white sugar
  • 1/2 teaspoon salt
2 ripe mangoes

Cook rice according to directions on package. While rice is cooking, add coconut milk, sugar, and salt to a small sauce pan. Bring to a boil then remove from heat. When rice is cooked, add coconut milk mixture to it and let cool to room temperature. Slice mango and serve with rice.

I forgot to mention that I don't use the full cup of sugar that the recipe calls for. I use half a cup and it is plenty sweet. Enjoy!

I used a little less than half a cup! We loved it!
